2 c all-purpose flour
1 1/2 c sugar
1/2 c unsweetened cocoa
1/2 c. butter, softened
1 c water
3 eggs
1 1/4 tsp baking powder
1 tsp baking soda
1 tsp vanilla

Filling:
2 c (1 pint) whipping cream
1 1/2 tsp mint extract
2 T sugar

Glaze
2 T butter
1/2 c semisweet chocolate chips
2 T light corn syrup
1/4 t mint extract

Directions:
Directions:
1. Heat oven to 350º F.
2. Grease 2 - 9" round cake pans. Line pans with waxed paper and grease again. Set aside.
3. In a large mixer bowl combine all cake ingredients. Beat at medium speed, scraping sides often, until smooth 2-3 minutes.
4. Pour into prepared pans
5. Bake for 20-30 minutes, until toothpick in center is clean.
6. Cool 10 minutes, remove from pans, remove wax paper, cool completely.
7. In a small, chilled mixer bowl combine whipping cream and 1 1/2 tsp mint extract. Beat at high, scraping sides often, until soft peaks form. Gradually add sugar until stiff peaks form 1-2 minutes form.
8. Reserve 1/2 c filling for garnish
9. Cut each cake in half horizontally with a serrated knife
10. Layer cake/filling - cake/filling - cake/filling - /cake and chill for at least 1 hour prior to adding glaze.
11. In large saucepan melt 2T butter. Stir in chocolate chips and corn syrup until chips are melted. Remove from heat and stir in 1/4 tsp mint extract. Spread glaze over cake top. Garnish with remaining filling and some fresh peppermint sprigs.
