1 package (14 ounces) of moist, shredded coconut
1 can cream of coconut
2-3 tablespoons flour
1 teaspoon almond extract
1/2 teaspoon vanilla extract
Pinch salt
2 egg whites, stiffly beaten

Directions:
Directions:
Preheat oven to 350º.

Mix together the first 5 ingredients (dough will be sticky). Fold in the beaten egg whites. Drop from a tablespoon onto parchment-lined cookie sheets, about one inch apart.

Bake for 5-7 minutes or until the macaroons are golden brown. Cool on trays and dust with powdered sugar if desired.

Store in airtight containers.
