6 crêpes (prepared) **
1 T. butter
1/2 c. green onions (chopped)
1 c. sliced mushrooms
1/4 c. butter
1/3 c. flour
1/2 tsp. salt
1/8 tsp. white pepper
2 c. milk
1 c. grated cheddar cheese
2 T. sherry
2 pkg. frozen small shrimp (6 oz. each)

In a skillet melt 1 T. butter over medium heat. Saute onions and mushroooms. Add additional butter, flour, salt and pepper. Gradually stir in milk and cook while stirring until thickened. Add grated cheese and sherry. Continue simmering until thickened.

Mix one cup of this sauce with the defrosted shrimp. Fill each crêpe with 1/3 cup of the mixture, folding two sides over the filling. Placed crêpes in a buttered baking pan and bake at 325º F for about 25 minutes. Serve with remaining sauce.
