4 T. olive oil
1 large yellow onion, cut in strips
3 garlic cloves, chopped in pieces
4 large green bell peppers
3 large red bell peppers
1 14 oz. can diced or stew tomatoes
1 lb.sweet italian sausage
1 lb. hot italian sausage
1/2 tsp. each of onion powder, garlic powder and parsley.
salt and pepper

Directions:
Directions:
Boil hot and sweet sausage for several minutes, remove from heat, drain water and rinse. Set aside to cool.
While boiling sausage saute onion and garlic in olive oil. When golden brown add pepper strips and fry until peppers are tender.
Slice sausage links into bite-size pieces and fry just to brown. Then add to skillet with peppers, onions and garlic. Add tomatoes and season with salt and pepper and the rest of the seasonings.
Then just simmer all together for 10-20 minutes.
