1 tsp olive oil
1 1/2 pounds chicken breast, cut into small pieces
1/4 cup chopped onion
1 cup chicken broth
1 4 oz can chopped green chiles
1 tsp garlic powder
1 tsp ground cumin
1/2 tsp oregano
1/2 tsp cilantro
1/8 tsp ground red pepper
1 9 oz can cannellini (white kidney beans)
garnish with shredded monterey jack cheese

Directions:
Directions:
Heat the olive oil in a large sauce pan over medium high heat. Add the chicken and onion. Cook for 4 to 5 minutes until chicken is cooked through. Stir in the chicken broth, green chiles, garlic powder, cumin, oregano, cilantro and red pepper. Simmer for 15 minutes. Stir in the undrained beans. Simmer for 5 minutes. Garnish with cheese.
