2 c. graham cracker crumbs
1/3 c. melted butter
3/4 c. chocolate chips
3/4 c. butter
1/2 c. powdered sugar
3 egg yolks, slightly beaten
3 egg whites
1 qt.chocolate mint or peppermint ice cream

Directions:
Directions:
Combine graham cracker crumbs and melted butter. Press into bottom of 13x9 pan. Melt chocolate chips in double boiler, add 3/4 c. butter and cool. Add powdered sugar and egg yolks. Beat egg whites until fluffy and gently fold into chocolate mixture. Spread on top of crumb mixture and freeze for 2-3 hours. Soften ice cream and spread on top of chocolate mixture. Sprinkle some graham cracker crumbs and chopped pecans on top, if desired. Return to freezer until ice cream is set again, at least 1 hour.

This recipe can be made a few days before you wish to serve and keeps well in freezer after first servings.
