2 c. sugar
1 1/2 c. veg. oil
2 c. flour
4 eggs
2 t. baking soda
1 t. vanilla
1/2 t. salt
1/4 t. lemon flavoring
2 t. cinnamon
2 1/2 c. shredded carrots

1 c. chopped nuts


FROSTING:

1/2 c. butter, softened
2 to 2 1/2 c. powdered sugar
8 oz. cream cheese, softened
1 to 1 1/2 t. vanilla

dash salt, if desired

Directions:
Directions:
Heat oven to 350º. Grease and flour 9 x 13 pan.
Combine dry ingredients in large bowl.
Add oil; beat 3 minutes. Add eggs one at a time, beating well after each. Add flavorings, carrots and nuts; mix well.
Pour into prepared pan. Bake 40-50 min. until toothpick inserted in center comes out clean. Cool.
Frosting:
Combine all ingredients; blend until smooth. Frost cooled cake.
