1/2 c. butter, softened
1 1/3 c flour
3/4 c. sugar
1 1/8 t. baking powder
2 eggs, separated
1/4 t. salt
1 t. grated lemon rind
1/2 t. soda
1 t. vanilla
2/3 c. buttermilk

2 1/2 T. poppy seeds

Cream butter with electric mixer. Add sugar and beat until light and fluffy. Add egg yolks one at a time, beating well after each. Beat in lemon rind and vanilla.
Sift flour, baking powder, salt and soda. Add to the butter mixture alternately with the buttermilk. Blend just until combined. Fold in poppy seeds.

In another bowl, beat egg whites until they hold soft peaks. Stir 1/4 of the whites into the batter, then fold in the remaining whites gently but thoroughly.
Spoon batter into buttered and floured miniature muffin tins, filling them 3/4 full. Bake in preheated 350 oven for 15 minutes, or until they are springy to the touch.
