2 (10oz) pkg. frozen whole kernel corn
2 T. (¼ stick) unsalted butter
2 T. sugar
¼ cup unbleached all-purpose flour
¼ cup matzo meal or unsalted cracker crumbs
1¼ tsp salt
1 tsp. baking powder
¼ to ½ tsp. cayenne
2 eggs, beaten to blend
pepper, freshly ground
2 T. whipping cream
1½ T. chopped chives
Corn oil (for frying)

Directions:
Directions:
Cook corn in saucepan of boiling water until tender (5 min). Drain well. Melt butter in heavy large skillet over med-heat. Add corn and sauté 3 min. Add sugar and stir 2 min. Transfer corn to small bowl using slotted spoon. Set aside.
Mix dry ingredients in large bowl. Stir in eggs, cream, chives, and corn. Heat 1-inch oil in heavy large skillet to 350°. Carefully drop batter by heaping tablespoons into oil. Cook in batches until deep golden brown (3 min/side). Transfer to paper towels using slotted spoon and drain. Serve hot.
