1 cup Bob’s Red Mill Wheat Bran
1 T. ground flax seeds
1 cup whole wheat flour
½ cup oat flour
½ cup dried blueberries, cranberries, or raisins
½ cup chopped walnuts
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
2 tsp. ground cinnamon
1 tsp. ground nutmeg
2 T. date sugar, maple sugar, or brown sugar

2 eggs
½ cup applesauce
1 mashed banana
½ cup organic black strap molasses
1 cup buttermilk
2 T. oil
1 tsp. vanilla extract

Whisk all dry ingredients together in medium bowl.

Add dry ingredients to wet and mix until moistened. Pour into 12 regular size muffin cups and bake on 400° for 15-20 minutes.
Options: There is approx. 2.5 cups of flour in this recipe. You can substitute ground bulgur or other whole grain flours for some of it, or you can use more oat flour, whole oats or cornmeal. I would make sure you use 1 cup of wheat bran though.
