1 stick of butter
3 cups crumbled up corn bread
3 cups wheat bread cut up in squares & crusts cut off
3 cups Pepperidge farm
seasoned stuffing mix
2 cups celery-chopped
2 cups thinly cut leeks
¼ cup parsley-chopped
1 pkg. Jimmy Dean’s lower fat sausage
2 T. thyme-chopped
2 T. sage- chopped
1 tsp. salt
1 tsp. pepper
2 eggs beaten with 2 cups turkey or chicken broth

Preheat oven to 350°. Butter 12 cup muffin pan & set aside. Melt butter in skillet & add leeks & celery, cook until soft (10 min), add crumbled sausage & cook until no pink shows (10 min), add to bread mix. Add all remaining ingredients in order and mix. Salt & pepper to taste before adding egg & broth. Mold into muffin cups equally, using all the stuffing. Bake for 22-25 min. Heat in microwave or in 350° oven for 15 minutes wrapped in foil.

Makes 12 muffins.
