2 lbs. pork tenderloin
6 Brazil nuts, grated
2 cloves garlic, minced
1 cup onion, minced
¼ cup lemon juice
¼ cup soy sauce
2 T. Brown sugar
2 T. Ground coriander
¼ tsp. crushed red pepper
¼ cup olive oil

Directions:
Directions:
Trim excess fat from meat. Cut meat into one-inch cubes. Combine all ingredients- add pork cubes- marinate for 20 minutes. Grill over coals, place meat on skewers or broil 10 minutes each side- brushing with reserved marinade. When grilling, brush meat with marinade. Serve with hot saffron rice.

Serves 4 to 6.
