chicken breasts or cutlets (pounded thin)
one pkg. sliced Munster cheese
½ cup cooking sherry
Italian bread crumbs
fresh parsley
sliced mushrooms (optional)

Directions:
Directions:
Chop parsley and add ½ to ¾ cup bread crumbs, put in flat pan. Dip pounded chicken breasts or cutlets into about 1/3 cup cooking sherry, then dip into breadcrumbs mixture. Put chicken in frying pan with enough light olive oil to keep from sticking. Brown chicken pieces lightly, on both sides, layer in Pyrex dish (like dominos). Pour about ½ cup sherry over chicken and cover with foil. Put in oven at 350°, cook about 15-20 minutes. If adding mushrooms, brown the sliced mushrooms in a little butter or olive oil. Drain and set aside. Remove chicken dish from oven, lay slices of Munster cheese over chicken. Add mushrooms on top of cheese. Garnish with a little chopped parsley to taste. Return to oven, without foil, to melt cheese for about 5-8 minutes, check & remove from oven before cheese totally melts and dissolves. Serve with rice pilaf and salad.
