1 ½ lb Filet of Beef
Salt & pepper
¼ cup olive oil
3 T. parsley, chopped
1 small minced shallot
3 T. grated prepared horseradish
¼ cup heavy cream, chilled & whipped stiff
flat leaf parsley for garnish
1 baguette, sliced in ¼ inch diagonal slices

Heat oven to 450°. Season the beef liberally with salt and pepper. Roast in a baking pan for 25 min. Combine the oil, shallots, parsley, salt & pepper in a small bowl. Spread this flavored oil on the bread and toast on baking sheets until golden (8-10 min.). Slice the beef thinly. Place a bit size piece of beef on each crostini. Whip the cream to stiff peaks and combine with horseradish, salt & pepper. Garnish each crostini with the cream and a piece of parsley.
