6 hard-boiled jumbo eggs
¼ cup mayonnaise
4 T. drained sun-dried tomatoes, minced fine
5 T. sour cream
salt & pepper to taste

Directions:
Halve the eggs lengthwise. Force the yolks through a Sieve or fine grater into a bowl. Blend 3 T. of the tomatoes, the mayonnaise, and sour cream. Egg sizes differ so add extra mayo if necessary.

Transfer mixture to a pastry bag with large decorative tip and pipe it into egg whites. Garnish the eggs with the remaining 1 T. tomatoes.
