"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
12 large peeled and chopped tomatoes 1 1/2 tbsp. celery salt 1 tbsp. chili powder 1 tbsp. garlic powder 5 1/2 tbsp. Worcestershire sauce 1 tbsp. onion powder 1 1/2 tbsp. Tabasco sauce
Place all ingredients in a large kettle. Simmer for 35 minutes. Remove and strain seeds. Return to heat. Bring to boil. Pour into 3 or 4 pint jars. Screw lids and rings on tightly. Process in a 10 minute boiling water bath. Store jars in a cool place. Rings can be removed once jars have sealed.
We use this not just for Bloody Marys which Jeff loves, but also for hot dishes, spaghetti sauces, or anywhere you would use a tomato sauce.
