3 cups finely grated carrots- cook a bit first
1 tsp. diced onion
½ cup bread crumbs
2 cups grate cheese- cheddar ex-sharp
1 ¼ cups white sauce
¾ tsp. salt
1/8 tsp. pepper
2 T. lemon juice
3 eggs- separated

Directions:
Directions:
Fill ring center with 12 small white onions & 1 cup of peas. Combine carrots, diced onions, bread crumbs, cheese, white sauce, salt, pepper, & lemon juice. Beat egg yolks & add to carrot mixture. Mix well. Beat egg whites until they stand in soft, stiff peaks. Fold egg whites into carrot mixture. Pour into a well-greased 1 ½ qt. ring mold. Place in a pan of hot water. Bake at 350° for 1 ½ hrs. Remove from oven, let stand for 10 min. Turn on to serving plate, fill center with buttered cooked peas & onions.
