1 bunch spinach
1 bunch red lettuce or romaine
1-2 avocado- slice (dip in lemon)
1 red onion
to 1 lb. shredded jack cheese
1 orange (fresh segments) or 1 can mandarin oranges
3 hard boiled eggs- slice or chop
1 cup chopped dates or prunes (optional)
1 cup toasted slivered almonds, walnuts, or pecans

Curry Dressing:
cup oil
cup rice vinegar
1 T. curry
1 T. sugar
Salt and pepper

Mix together all ingredients.
