1 1/4 C whole wheat flour
2 heaping tbsp. honey
2 1/2 tsp baking powder
1/2 tsp. salt
1/4 tsp soda
3/4 C. oatmeal
1 egg beaten
3 tbsp oil
1/2 C. milk (may add lemon juice to sour the milk)
1 C. mashed ripe bananas
1/3 C. chopped pecans

Directions:

Combine flour, baking powder, salt, soda and oats. Add egg, oil, milk, honey, bananas, and nuts. Stir only until dry ingredients are moistened. Fill greased muffin cups 2/3 full. Bake at 400 degrees for 15 minutes or until done.
