6 Filetes grandes de salmón
6 Cdas. de pimienta entera mixta (negra, verde, roja)

Maceración
12 Cdas. de aceite de oliva extra virgen
12 Cdas. de sillao Kikoman
6 dientes de ajo bien machacados
6 chtas. de azúcar
6 chtas. de jugo de limón
12 gotitas de jugo de kión (rallar un trozo de kión y presionarlo con la mano)
sal al gusto

Directions:
Macerar el salmón con todos los ingredientes por unas 2 horas. Sacar el salmón de la maceración y secarlo suavemente con papel toalla. Luego chancar la pimienta mixta y cubrir cada filete.

Freír 2 minutos por el lado de la pimienta, voltearlo y freír 2 minutos más por el otro lado; debe quedar bien rosado al centro.

Salsa:
Reducir el resto de la maceración en una ollita hasta que tome punto. Rectificar la sazón.

Servir el filete adornándolo con la salsa. Acompańar con legumbres, papas o rissotto.
