5 lbs duck
1/2 teaspoon caraway seed
2 cups water
salt and pepper
1 large onion

Directions:
Directions:
Sprinkle with salt and pepper and caraway seeds inside and out. Place onion halves in duck cavity
Pour 1 cup water in a roasting pan.
Put covered duck in 350° oven for 1 Hr.
Uncover for another 45 minutes. Add more water as needed. On top of stove, heat up sauerkraut and pour off some of the duck grease into the kraut making sure you get plenty of caraway seed. (I know, don't yell, but it does taste good and it is the Czech way.) Make dumplings and cook in sauerkraut.
