1 cup uncooked quick cooking wild rice
1 cup chopped onion
2 garlic cloves minced
3 cups chicken broth
1 ˝ cup cubed peeled potatoes
3 cups milk
1/3 cup flour
10 oz. light processed cheese (like Velveeta)
2 cups chopped cooked chicken
Salt, Pepper, Parsley

Directions:
Directions:
Cook rice according to package.
In large pot sauté onion & garlic in a small amount of oil for aprox. 3 minutes. Add broth & potatoes and bring to a boil. Cover and reduce heat to low for 5 minutes.
Combine milk and flour with a whisk until smooth and add to pot. Cook until slightly thick, about 5 minutes, stirring occasionally.
Remove from heat and stir in cheese until melted. Finally add the chicken, rice, salt, pepper, parsley. Return to very low heat until ready to serve.
