Mu's Eggplant Recipe

2 eggplants, peeled, cooked and mashed
1 onion, chopped
3 ribs celery, chopped
1 bell pepper, chopped
1 T. Italian seasoning
1 t. basil
1 T. parsley
2 cloves garlic, chopped
1 t. thyme,
pinch anise
salt and pepper to taste
3 eggs, beaten
1 c. bread crumbs
1 c. cooked shrimp, coarsely, chopped
1 c. crabmeat

Saute onion, celery and bell pepper in a little olive oil. Combine all ingredients and pour in a greased casserole. Bake for 1 hour at 350
