2 egg whites (1/4 c.)
1 1/2 c. sugar
1/3 c. water
1/4 tsp. cream of tartar (or 1 Tbsp. light corn syrup)
1 tsp. vanilla

Directions:
Directions:

Mix all ingredients except vanilla in top of double boiler. Place over boiling water; beat with rotary beater until stiff peaks form. Scrape bottom and sides of pan occasionally. Fold in vanilla.

Use this frosting for Ruby's Best Angel Food Cake (recipe in this cook book).
