2 c. Bisquick baking mix
2 Tbsp. sugar
1 egg
2/3 c. water or milk
1 c. finely chopped apple

1/4 c. sugar
2 Tbsp. Bisquick Mix
2 tsp. ground cinnamon
2 Tbsp. firm butter

Heat oven to 400. Grease 9-inch round pan (or square pan 8 x 8 x 2 inches). Prepare topping mix.
Mix baking mix, sugar, egg and water; beat vigorously 30 seconds. Stir in apple. Spread batter in pan, sprinkle with topping mix.

Bake until wooden pick inserted in center comes out clean, 20-25 minutes. Refrigerate any remaining coffee cake.
