4 tbsp pickling salt
2 tbsp onion powder
1 tsp ground thyme and bay leaf
1 tsp black pepper
2 tbsp garlic powder
2 tbsp paprika
1 tsp ground sage
1 tsp celery seed

Directions:
Directions:
Sprinkle seasonings on meat and rub.
Refrigerate 1-5 hrs.
prepare for grill for long term, low temp cooking.
Baste meat with basting sauce and let dry while reaching room temp.
Baste again and place on grill
Baste and turn at 30 min intervals for 5-8 hrs until tender
Don't let temp rise above 225 for extended periods
Finish off with BBQ or finishing sauce
Apply when ribs are done and coals are cooler
