Crab Linguini Recipe

Ingredients: 1 cooked Dungeness crab
4 tsps. extra virgin olive oil
1 medium onion
5 cloves garlic
2 tbsp. Italian seasoning
1 tsp. ground nutmeg
Parmesan cheese
Salt
Pepper
Linguini noodles
2 tsp. butter or margarine

Directions:1. Remove all meat from Dungeness crab legs and body.
2. Dice onions. Mince garlic.
3. Boil water with salt to taste, and add linguini (I use about half a 1 lb. package of Barilla linguini). Cook until linguini is al dente. Drain.
4. In a large skillet, saute garlic in olive oil until garlic is light brown. Add onions, Italian seasoning, nutmeg, fresh ground pepper, and salt to taste. Saute until onions are opaque. Add crab meat, and saute until heated through.
5. Combine noodles with crab combination over heat, and mix thoroughly, adding freshly grated parmesan cheese to taste.
6. Serve while hot. |

Notes: This is a recipe that my mom introduced to me, and I altered to make my own. I recommend fresh Dungeness crab, which is abundant in this region, rather than store bought, prepackaged crab. The spice measurements are a guess...I usually don't measure out spices when I cook, but when you add the spices, it should be aromatic, and you should be able to clearly smell all the different spices that you've added.
