2 T orange juice concentrate
juice and zest of one lime
juice of one lemon
1 tsp fresh grated ginger
2 T honey
2 T safflower oil
1/2 tsp cayenne pepper
1/4 tsp cinnamon
1/4 tsp allspice
3 pounds cooked sweet potatoes, peeled and diced
1 ripe mango, peeled and diced
1 C fresh cubed pineapple
1/4 C currants (can use currant jelly)

Directions:

Whirl in blender the orange juice, lemon and lime juice, zest, ginger, honey, oil, cayenne, currant jelly, and spices.

Toss the sweet potatoes, mango and pineapple with the dressing and chill.
