2 med. tomatoes chooped (or use canned)
2 cans black-eyed peas drained
1 can hominy drained
4 green onions chopped
2 garlic cloves minced
1 green bell pepper chopped
1 jalapeno pepper
1/2 c. parsley or cilantro chopped
1/2 cup chopped onion
1 bottle (8oz) Italian salad dressing

Mix together. Let chill several hours and serve with tortilla chips.

To save time I have used various combinations of canned tomatoes with the seasonings, and other ingredients added.

Can also substitute or add white corn, black beans, etc. Add cumin if desired.
