20 oz (or 2 full bags) frozen "California Mixed Vegtables",
thawed and cut into smaller pieces
1/4 C mayonaise
2 cans cream of mushroom soup
1 t lemon juice
16 oz shredded mild cheddar cheese

Directions:
Directions:
Mix the first 5 ingredients together and place in a 9 X 13 baking dish. Melt butter and add to bread crumbs. Top vegtable mixture with bread crumbs. Bake for 45 mins to 1 hr, uncovered, at 350 degrees.

This is a wonderful recipe to prepare ahead of time, even the day before and pop into the oven when your ready. If you do prepare this ahead of time, the frozen vegtables do not have to be thawed all the way, partially frozen is fine. Prepare as above, cover and refrigerate. Remove the casserole from the frig about a 1/2 hr before cooking to allow it to come to room temp.
