6 Chicken Eggs
One tsp cold unsalted butter diced fine
salt to taste
One teaspoon fresh chives minced (optional)
One tablespoon fresh caviar (optional) but I would use this it makes the dish
Items needed:
One double boiler or a sauce pan with metal bowl will do. One rubber spatula or wisk

Directions:
Directions:
1. Fill the bottom of the double boiler with one inch of water and bring to a simmer.
2. Crack eggs in top of double boiler off the heat and mix just to combine.
3. Add a pinch of salt to the egg mixture.
4. Place egg mixture over heat and begin stirring gently with rubber spatula or wisk.
5. Once eggs begin to set and look just undercooked transfer to plate, they will continue to cook for a few minutes off the heat.
6. Garnish with minced chives and fresh caviar.
