Ingredients:  
1 Tbsp olive oil & 1 tsp olive oil
1/2 cup diced onion
3 cloves minced garlic
1 cup roasted corn
2 tsp green chilies
3 cups vegetable or chicken stock
1 tsp red pepper flakes
1 tsp black pepper
2 Tbsp chiffonade of cilantro & mint
1 cup cooked shrimp

Directions:
Directions:
Saute onion & garlic in 1 Tbsp olive oil. Saute until golden and popping. Pull from heat. Add corn to onion and garlic. Add chilies, pepper flakes, pepper & broth. Bring to a simmer and add shrimp. Remove from heat and served garnished with mint mint and cilantro.
