1 large cabbage (about 3 lbs) cored and cut in shreds
1 teaspoon salt, divided
2 cups boiling water
2 tablespoons all-purpose flour
1 cup milk
cup shredded Cheddar cheese
3 tablespoon saltine cracker crumbs,
optional

Directions:
Directions:
Cook cabbage and 1 teaspoon salt in 2 cups boiling water for 8 minutes; drain.
Place cabbage in a lightly greased 2-quart baking dish. Melt butter in a small saucepan over medium-high heat. Whisk in flour, then slowly whisk in milk until thickened. Remove from heat. Whisk in teaspoon salt and the cheese, whisking until the cheese melts. Pour cheese mixture over cabbage. Sprinkle evenly with cracker crumbs, if desired. Bake uncovered for 30 minutes or until bubbly.
