1 large cabbage (about 3 lbs) cored and cut in shreds
1 ¼ teaspoon salt, divided
2 cups boiling water
2 tablespoons all-purpose flour
1 cup milk
½ cup shredded Cheddar cheese
3 tablespoon saltine cracker crumbs,
optional

Directions:
Directions:
Cook cabbage and 1 teaspoon salt in 2 cups boiling water for 8 minutes; drain.
Place cabbage in a lightly greased 2-quart baking dish. Melt butter in a small saucepan over medium-high heat. Whisk in flour, then slowly whisk in milk until thickened. Remove from heat. Whisk in ¼ teaspoon salt and the cheese, whisking until the cheese melts. Pour cheese mixture over cabbage. Sprinkle evenly with cracker crumbs, if desired. Bake uncovered for 30 minutes or until bubbly.
