1 1/2 cup Pancake Mix for Perfect Pancakes (see that recipe)
1 egg slightly beaten
1 cup water
3 Tbsp. oil

Directions:
Directions:
Put pancake mix in a medium bowl. Combine egg, water and oil in a small bowl. Add to pancake mix. Blend well. Add more water for thinner pancakes. Let stand 5 minutes. Cook on hot oiled griddle.

For variety, add your favorite fruit to the batter.

We make these pancakes all the time. They are great! I always double the recipe to have enough for a meal for my family, which also gives us a few leftovers.

We like a variety of toppings on our pancakes, including homemade maple syrup (I've included a recipe), homemade apricot or strawberry jam cold or heated, applesauce, cranberry sauce, peaches, strawberries and whipped topping, or other fruit, or ice cream!
