1 can refried beans
2 chicken breasts
1 can tomato sauce
1 package enchilada seasoning
3 cups cooked rice (3/4 cup rice and 1 1/2 cups water)
2 cups cheese

Directions:
Directions:
Preheat oven to 350º. Cook the chicken breasts and shred. Mix the chicken, tomato sauce, and seasoning together. In a 9 inch round casserole dish, spread a layer of refried beans on the bottom. Next spread a layer of rice. Then spread a layer of chicken mixture and finally a layer of cheese. Repeat these four layers.

Bake for 35-40 minutes. This is also great topped with lettuce, sour cream, and tomatoes when served.

I love the simplicity of this recipe. I cook the chicken and freeze it until I am ready to use it. I also usually buy enchilada sauce instead of tomato sauce and enchilada seasoning. Rice can also be cooked ahead. And it is so yummy with the suggested toppings!
