1 cup sifted flour
1 tsp baking powder
1/4 tsp salt
1 egg
1 cup milk
1 tbsp vegetable salad oil
4 sweet Spanish onions
Oil or shortening for frying

Directions:
Batter--Combine in flour sifter, flour, baking powder and salt. Beat egg into deep bowl until thick and lemon colored. Add milk and vegetable oil and stir in sifted ingredients. Beat until smooth, cover and set aside while preparing onions. Onions--Select 4 sweet Spanish onions, about 3 1/2" across. Cut off root end of each and slip off loose skins. Hold by stem and slice about 1/4" thick and slip off skin. Makes about 5 servings. Fry--In electric skillet or heavy frying pan, add oil or shortening 1 1/2 to 2" deep. Ideal temperature 375º. Dip a few onion rings at a time into batter, using long-handled fork, and let drain briefly before dropping into heated fat. Turn only once, and do not crowd skillet. When golden brown on both sides, lift out and drain. Serve hot or freeze. To Freeze--fry, drain, and leave rings on paper towel lined cookie sheet and place in freezer. When frozen store in box with paper towels between layers. Place frozen rings on cookie sheet in 375º oven until crisp. Takes only minutes.
