2-3 lbs. boneless chuck roast, cut into 1" cubes
flour for dredging beef cubes
3-4 potatoes, quartered
5-6 carrots, peeled and cut into bite-size pieces
3-4 onions, cut into 6 pieces
1 cup beef broth

Directions:
Directions:
Heat oil in a large pot. Dredge beef in flour, and brown. Add cut-up vegetables and beef broth. Simmer on low heat for about 2 hours, until beef is tender. If broth nedds to be thickened, make a slurry with flour and cold water, and add slowly until desired thickness.
