Turkey Fried Rice Recipe

2 c. water
1 c. long grain rice
2 tbsp. soy sauce
2 c. chopped cooked turkey or chicken
1/2 c. frozen green peas
1/2 c. chopped carrots
1/4 c. thinly sliced green onions
1/4 c. chopped green bell pepper
1 egg, lightly beaten

Cook rice according to package directions. Cover and set aside.
Heat soy sauce in medium saucepan. Add turkey; cover and cook 5 minutes. Add peas and next 3 ingredients; saute 3 minutes over medium heat. Stir in egg, and cook 1 minute or until egg is done, stirring constantly.
Combine rice and turkey mixture; stir well. Serve warm.
