3 boneless chicken breasts cut into strips.
1 (14 oz) can chicken broth seasoned with Italian herbs.
3/4 c uncooked rice
1/4 c grated Parmesan cheese

Directions:
Directions:
Cook chicken in nonstick skillet until brown, stir often. Remove chicken from skillet. To the skillet add the broth and rice. Heat to boiling point. Cover and simmer over low heat for 25 minutes (check to see if needs more liquid). Stir in cheese. Then return chicken to the skillet and heat through.

As with most casseroles, all you need to top this off is a crusty french bread and a tossed salad.
