1 lb. sweet Italian pork sausage, cut into 1 inch pieces.
2 large carrots, sliced
1 large onion, chopped
2 cloves garlic, minced
2 Cans (14 oz. each) Swanson Vegetable broth
2 teas. dried oregano leaves, crushed OR 2 Tbsp chopped fresh oregano
1 bay leaf
2 C. cubed red-skinned potatoes
1/2 C dried lentils
2 C. coarsely chopped broccoli rabe

Directions:
Directions:
heat oil or cooking spray until sausage is browned, stirring often. Pour off fat.
Add carrots, onion and garlic and cook until tender.
Add broth, oregano, bay leaf, potatoes and lentils. Heat to a boil. Cover and cook over low heat 40 minutes or until lentils are done. (You may substitute half the lentils for the same amount of dried split green peas if you like more variety.)
