Potato Salad Recipe

5 lbs potatoes
1 large diced onion
4 stalks celery, diced
1 green pepper, cored and diced
1 heaping T pickle relish
salt & pepper, to taste
touch of garlic powder
1 t parsley flakes
2 hard boiled eggs, chopped
3/4 c mayonnaise
1 T mustard
1 t vinegar

Cook potatoes in boiling water until done, about 25 minutes. Cool completely and then skin and cut into 1.5" cubes and place in large bowl.

Add diced onion, celery, green pepper, relish, salt & pepper, garlic powder, parsley flakes and chopped egg. Gently mix together.

In small bowl combine mayonnaise, mustard and vinegar. Add this to potato mixture. Cover and chill through before serving.
