1 pound cleaned and deveined shrimp
1 cup rice, uncooked
6 tablespoons butter
1 cup thinly sliced celery
1/4 cup flour
1 cup half-and-half
1 teaspoon seasoned salt (such as Lawry's)
Dash pepper
1/2 cup shredded Cheddar cheese

Prepare rice and keep warm. In medium skillet over medium high heat, melt butter. Add shrimp and celery and saute 10 minutes or until shrimp have just turned pink, stirring occasionally. Remove about 6 shrimp for garnish.

Reduce heat to medium. Stir flour into remaining shrimp mixture until well blended. Gradually stir in milk, salt, and pepper. Cook, stirring constantly, until mixture thickens and shrimp are tender.

Place hot rice in casserole. Top with shrimp mixture, sprinkle with cheese and garnish with reserved shrimp. Bake 5 minutes or until cheese is melted and hot.
