4 cups cubed (1 inch) French bread or peasant
bread.
6 T. olive oil
1 tsp dried thyme
Salt and freshly ground pepper to taste
3 medium-sized red onions. Peeled and sliced into
1/2-inch slices.
8 ripe plum tomatoes
1 hothouse cucumber, peeled, halved lengthwise
and cut into 1-inch pieces
1/2 c fresh basil leaves slivered
3 T red-wine viegar.

1. Place the bread cubes in a bowl. Drizzle with 2 tablespoons of olive oil and sprinkle with the thyme, salt and pepper. Toss well and set aside.
2. Brush the onion slices lightly on both sides with 1 tablespoon of olive oil. Grill over hot coals, 3 inches from the heat, for 5 minutes per side. Remove onions to a plate and set aside.
3. Place 4 plum tomatoes lengthwise on each of 2 metal skewers, and brush them lightly with 1 tablespoon of okive oil. Place skewers on the grill and cook, turning, for 5 mintes. Remove to a plate and set aside.
4. Thread the bread cubes onto skewers, leaving some space in between, and grill for 1 1/2 minutes on each side. Remove the bread to a bowl. Cut each of the onion slices into quarters and add to the bread. Carefully cut the reserved tomatoes into quarters and add to the bread along with the cucumber and basil. Drizzle with the remaining 2 tablespoons of olive oil (add more if desired) and the red-wine vinegar: Toss well. Adjust seasoning and serve immediately.
