1 can (15 1/2 ounces) pink salmon, drained
1 medium onion, peeled and finely chopped
3 tablespoons butter or margarine, melted
3/4 cup finely crushed saltines
2 tablespoons self-rising flour, plus some for coating
1/4 teaspoon pepper
1 egg, beaten
1 tablespoon lemon juice
Vegetable oil

Directions:
Directions:
Remove skin and bones from salmon; flake salmon with a fork. Saute onion in butter until tender, remove from heat and stir in salmon and everything else but the oil. Form into small croquette shaped patties, coat with flour and cook in hot oil in heavy pan until golden brown. Drain.
