2 medium zucchini, chopped
1 medium yellow crook-neck squash, chopped
1 small chayote squash, cored and chopped
1 small yellow onion, diced
2 garlic cloves, chopped
1 c. frozen corn
3 tbsp. butter
1/2 c. salsa
2 c. cheese
salt

Directions:
Directions:
Melt butter in a medium skillet under medium heat. Increase heat to high and add onion. Cook until onion just begins to soften, add garlic. Cook, stirring, until fragrant - about 1 minute. Add squash and mix well. Saute for about 3 minutes until the vegetables are beginning to soften. Cover pan, reduce heat to medium and steam until tender but not mushy. Remove from heat. Add corn and salsa, mixing until corn is completely thawed. Season to taste. Transfer mixture to a casserole dish. Top with cheese. Heat under broiler until cheese is bubbly and just starting to brown.
