1 c. salt
1/2 c. brown sugar
1 gallon vegetable stock
1 tbsp. black peppercorns (whole)
1/2 tsp. candied ginger
water

Directions:
Directions:
Combine above ingredients in saucepan. Bring to a boil, reduce heat and simmer for 15 minutes. Cool completely in refrigerator. Place thawed and washed turkey in a large bucket or small cooler. Add brine mixture and sufficient water to just cover turkey. Add ice to cool. Maintain ice in the mixture unless you're able to refrigerate the whole contraption. Allow to marinate for at least 12 hours or as long as 24.
