5 chicken breasts
2 T. lemon juice
4 T. diced shallot
2 tsp. chopped fresh tarragon
mayo until moist
salt and pepper to taste

finely chopped smoked almonds
homemade white bread

Directions:
Directions:
Steam and cube (or shred) chicken breasts.
Combine with all other ingredients except almonds. Cut crusts off bread. Make sandwiches and cut into triangles. Spread mayo on one side of triangle (do two for more flavor) and press into chopped almonds.
