Catfish (steaks or whole)
2 C. yellow cornmeal
1 tsp. salt
1/2 tsp pepper
1 or 2 Tbsp paprika
1/8 tsp. cayenne pepper

Directions:
Directions:
Mix cornmeal, salt, black pepper, paprika and cayenne pepper. Coat catfish well and fry in hot oil until browned. The fish will float to the top when done.
