1/2 c. olive oil
1 c. finely chopped onion
1/2 c. finely chopped green onion
4 # fresh spinach, washed, drained well, and finely chopped
1/2 c. fresh chopped dill, or 2 T dried
1/2 c. finely chopped fresh parsley
1 tsp. salt
pepper to tatse
2/3 c. milk
1 # feta cheese, crumbled
8 eggs, lightly beaten
1 # melted butter
32 sheets filo pastry (1 #)

Directions:
Saute onions scallions in oil until soft. Stir in spinach, cover tightly and cook 5 minutes. Add dill, parsley, salt and pepper and cook uncovered,. shaking pan constantly until most of the liquid is cooked off.Transfer spinach to a large bowl...when cooled add milk, cheese, and eggs. Mix well.
Butter a 12x 7 inch baking dish. Layer 9 sheets of filo each brushed with melted butter. Spread spinach cheese mixture over filo. Cover with 8 more layers filo, buttering each layer as you go.
Bake at 300 degrees until delicately browned. Cut into squares and serve.

Don't be intimidated by the amount of time needed to prepare Spanikopita. It will be well worth it! Fresh herbs and spinach make all the difference in this wonderful side dish.
