Baked Chicken and Ziti (serves 4) Recipe

1/2 lb. chicken breasts cut into 1/4" strips
1 onion, chopped
2 garlic cloves, minced
1 28 oz. can crushed tomatoes
1 tsp. Italian seasoning
1/4 tsp. black pepper
2 C. penne or ziti
2/3 C. nonfat ricotta cheese
1/3 C. shredded mozzarella cheese
2 tbs. grated Parmesan cheese

1. Spray skillet with cooking spray. Heat; add chicken and heat. Cook until lightly browned, 5-6 minutes. Transfer to plate.
2. Preheat oven to 375 F
3. Add onion and garlic to pan. Cook ~ 5 minutes. Add tomatoes, Italian seasoning and pepper. Bring to a boil. Reduce heat and simmer, uncovered, until thickened ~ 8-10 minutes.
4. Cook pasta. Drain and mix with Ricotta.
5. Pour 1/2 of tomato mixture into 13 x 9 pan. Layer with ziti mixture, chicken and remaining tomato mixture. Sprinkle with cheeses. Bake until hot and bubbly. Cheese is melted ~ 15-20 minutes.
